I proudly present you my first Fondant Cake! I must admit I had big hopes and hoped it would come out like this and it actually did! Yay! The reason of my cake presentation today is to show you that anything is possible, you just need a bit of patience and smile…

So here it is Cake cake cake ! Everybody loves cake Don’t we?!!!! Ahhhh I’m hearing so many things, yea i love cake but … but… no no no no no, Don’t think about calories right now, don’t think about your diet… Just let go and ddrreeaammmm!

It is called a Red Velvet Cake with Cream cheese icing covered with Fondant. I personnally call it my Valentine’s cake for my fiancé (isn’t he lucky or what?) So where to start....

First step when doing a cake like this is finding the recipe and trust me that was the rough part. I was looking for red velvet and found soo maannyy different recipes. Now how do we choose the right one ?! Well, read the reviews and follow your gut. Alright so, after you did that you got your recipe, you go to the grocery to find your things…. And you start …

1 – Fondant
Why start by the fondant ? Well It need to rest for at least 12 hours on your counter before you use it ( some says to put it in the fridge, some says don’t put it in the fridge ,some says use it right away some don’t argh…. ) I decided to go with my gut and to wrap it and leave it on the counter for 12 hours before using it. It was a good guest .
To do your fondant (professional style) you need the following :
- Icing Sugar
- Cold water
- Corn syrup (white)
- Gelatin
- Glycerin
Ok let me tell you, the Glycerin is not easy to find! I had to go in a bakery to ask where to find it cause in grocery stores nobody knew what I was talking about… You have to go where they sell stuff for professional cake makers ☺. It is a must.
Then you do it , LOT’S of fun ! messy but fun!
It’ll rest for 12 hours on your counter wrapped 2 times in saran wrap + ziploc with no air inside.
Tips : Don't put too much sugar if not it'll dry more easily and the glycerin, even if it is hard to find, it will help you ALOT.

2- Red Velvet Yummy Cake
Ok this is the most important part for me,,, make sure this cake tastes like heaven. Follow your recipe, don’t forget the red food coloring and everything will be just good!
Tips : Don’t mix it too much if not it’ll be stiff.

3- Icing
Here you can choose between buttercream, vanilla, creamchesse or whatever you like. I love cream-cheese so let’s go for it. It is the easiest icing I have evermade. So Yummy.


Here, everything is done, only the finishing touch to do …
Put your icing on your cooled cake, put it in the fridge for few hours.
During that time, prepare your fondant, roll roll roll!
Little tip here : don’t forget to add an anti-adhesive solution (icing sugar) on your counter while rolling your fondant if not : BAD surprise, it’ll stick to your counter and you will have to redo everything.
Another tip, if your fondant is too dry to work with , just add a bit of corn syrup it’ll do the job!

Then, use your imagination and Boom!
